Roasted Artichoke
Truth be told, I straight up stole this recipe from celebrity chef, Alison Roman. Although it requires a little fussy preparation to clean the artichoke, it is totally worth the effort and is one of my favorite things to eat.
Ingredients:
1 large artichoke
1/2 cup dry white wine
1 cup water
2 tbs olive oil
2 tbs unsalted butter cut into small pieces
2 garlic cloves, smashed
pinch of Aleppo or red pepper
Kosher salt and fresh ground black pepper
Directions:
Preheat oven to 425 degrees.
Prepare your raw artichoke - Slice off the top inch of the artichoke exposing the yellow/purple interior and trim the very end of stem. (Do NOT slice off the stem….it is delicious!) Carefully cut the artichoke in half lengthwise. Use a spoon the dig out the fuzzy choke. Plunge each half in water to clean out any lingering bits.
Place cleaned artichoke halves in roasting dish. Add water, wine, butter chunks, smashed garlic and Aleppo pepper. Drizzle artichokes with olive oil and season with salt and pepper. Cover tightly with foil.
Roast covered for 40 minutes.
Remove foil and roast an additional 10 to 15 minutes until artichokes are nicely browned.
