Lemon Vinaigrette

Ingredients:

Juice of one lemon (about 1/4 cup)

1 to 2 tablespoons stone ground mustard

2/3 to 3/4 cup Extra Virgin Olive Oil

Generous pinch of sea salt

6 or 7 cranks of pepper

Directions:

Vinaigrette is easy - Just remember 1 part acid to 3 parts oil.

Mix in a liquid measuring cup but it does not need to be exact.

Pour into dressing bottle or a mason jar, seal and shake.

Notes:

For a touch of sweet, add scant amount of honey or maple syrup

Feel free to experiment with herbs

Store in fridge for 7-10 days

Allow to come up to room temperature 10-15 minutes before serving.
