Pork Chops & Green Beans
This recipe takes only a few minutes to throw together, making it a perfect meal when you do not have time to stand in the kitchen.
Ingredients:
2 thick-cut hormone-free pork chops (bone-in or boneless)
1 bag (12 ounces) green beans, pre-cleaned and trimmed
1/2 cup water
Extra virgin olive oil
1 tbsp real butter, divided
2 toes garlic finely minced (The prepared stuff in a jar or tube is fine too)
Kosher salt
fresh pepper
1/2 cup water
Directions:
Preheat oven to 375 degrees.
In glass or ceramic baking dish (approximately 8x8 or round) dump green beans in bottom. Liberally drizzle olive over beans, toss with salt and pepper. Add 1/2 cup water to bottom of the pan.
Salt both sides of pork chops and lay them on top of green beans. Lay 1/2 tbs of butter on each chop and top with 1 toe of minced garlic. Add several cranks of pepper.
Roast about 40 minutes, or until chops are cooked through.
Notes:
Recipe can easily be doubled or tripled.
Do not go skimpy on the olive oil. Good fats are good for us.
If your chops are on the thin side, roast the beans for about 15 minutes first before topping with chops.
