Hummus
Traditional hummus is made with olive oil, however, if you read the label of store-bought hummus, usually it is made with cheap, low quality, mechanically produced seed oils. This homemade version is so much better tasting and better for you!
Ingredients:
1 can (15 ounce) chickpeas, drained and rinsed. *Reserve 3 tbs of canned liquid
Juice of 1/2 a lemon (more if you like)
1/4 cup tahini (make sure to stir it well)
2 tbs extra virgin olive oil plus more for serving
1 toe garlic, minced
1/2 tsp cumin
Sea salt to taste
2 to 3 tbs of reserved chick pea can liquid
Sumac, paprika, or Aleppo pepper for serving
Directions:
In a blender combine tahini and lemon juice. Blend for 1 to 2 minutes until creamy and whipped.
Add olive oil, garlic, cumin and 1/2 tsp salt. Blend about 30 seconds.
Add 1/2 the chick peas, blend, scrape down sides. Add remaining chick peas. Blend until smooth.
Add 1 tbs of can liquid at a time to the blender until hummus is the consistency you like.
Serve in a pretty bowl, drizzle with olive oil, top with sumac, paprika, or Aleppo pepper.
Instead of pita or crackers, consider serving with cut veggies like cucumbers, peppers, carrots, cauliflower, or celery.
